Honey Lime Enchiladas

Okay, I found this recipe on "The Sister's Cafe" blog (http://sisterscafe.blogspot.com) and made them a couple weeks ago. OMG - these are the best enchiladas ever! I don't think I will ever go back to any other recipe. The sweetness of the chicken combined with the spice - perfect combination!

Honey Lime Enchiladas
1.5 lbs pork or chicken, cooked and shredded (I used a rotisserie chicken)

Sauce:
1/3 c honey
1/4 c lime juice
1 Tb chili powder
1/2 tsp garlic powder

Equal parts mixed together of:
mozzarella cheese, shredded
cheddar cheese, shredded

flour tortillas
2 (10 oz) cans green enchilada sauce (I ended up only using 1 can)

Directions:

1. Mix together sauce ingredients then add to shredded pork or chicken. Let the sauce soak into the meat for about 30 minutes.
2. Lightly spray 2 pans with non-stick baking spray. (I used one 9x13 but you could make it two 9x9 and freeze one for later).
3. Pour green enchilada sauce into pans to coat the entire bottom.
4. Fill tortillas with shredded meat and desired amount of cheese.
5. Roll and place in dish.
6. Pour remainder of sauce over enchiladas and sprinkle more cheese on top - don't be stingy!
7. Bake uncovered at 350 degrees for 30 minutes.

Christmas is in the air

Let the Christmas festivities begin :-) My favorite holiday season! We started getting in the holiday spirit last Thursday with the annual Auburn Christmas parade. It was a brrrrrr of an evening as we sipped on hot chocolate and waited for the many pickup trucks to drift by with a bunch of kids in the back (felt like I was back in my hometown watching people ride the loop). Yes, the parade was a little disappointing to say the least... After about 30 minutes, I think we saw about 5 real floats. No Christmas caroling or decorations... Here are a few highlights:

Now for the real fun!! We had breakfast with Santa at the Fountainview Mansion in Auburn on Saturday morning and it was awesome. When I made reservations, the owner told me to be sure to get there early as Santa would be making a grand entrance and boy did he. Santa came all the way from the North Pole via

Yes, a helicopter. It was pretty cool. After his arrival, we had breakfast, had our picture made, painted a toy train, made an ornament, and decorated cookies.

After the breakfast festivities, we came home and got our artificial tree out of the box and trimmed the tree. It is a little small - I am hoping I can score a good deal on a new tree after Christmas.
And to round out the weekend, I told Isabelle we would decorate a Gingerbread house. I found one at World Market that was already assembled for decorating. I didn't realize that you had to make frosting and add food coloring. Oh no - if you remember my blog from last Easter - I am not the best when it comes to frosting... Isabelle did have a blast and is very proud of her gingerbread house.
Our last holiday event will take place next Friday when we take a road trip to Chattanooga to ride the North Pole Express. We have never been to Chattanooga so I am looking forward to the trip. We are also going to pay a visit to the aquarium.

My Auburn Girl

I finally have a funny story to blog about :-)

For the past 3 weeks, Isabelle has requested to listen to the Auburn fight song and Glory Glory Auburn in the car. Isabelle would sing along to the songs in the car and it wasn't just in the car... She would constantly sing it.... For those of you who don't know the song it goes like "War Eagle fly down the field, ever to conquer, never to yield...".

Yesterday, Isabelle came home from school and whispered "Alabama beat Auburn". Tommy and I looked and each and said "what" and she said it again. I guess at school she tried singing the fight song and her teachers had to sit her down and tell her that Alabama beat Auburn and it was time to stop singing the fight song. Poor girl.

This morning when we got in the car, I asked if she wanted to listen to some Christmas music and here are her exact words:

"Yes, because Alabama beat Auburn. Why did Alabama do that? Auburn is a great team."

This marks the end of Auburn music in the car until next season.

I almost put the cute quote on my facebook status but I knew it would attract a lot of comments from all my Bama friends :-)

Isabelle's 3rd Birthday

Wow - I can't believe my baby is now 3 years old! This year we decided to do a "real" kid birthday party. The previous 2 years, we kept it low key and just had a family cookout. This year I decided to have a party at Premier Athletic and invite all of her little friends. It was great - no cleaning the house before and afterwards and no stress! They took care of everything! I just had to bring the birthday girl and supply the cake and ice cream!!

Can't fool a 3 year old!

**UPDATE - I had this typed up and ready to post yesterday but my Internet decided to not work last night when it came time to post pictures. Isabelle is 3 today - happy birthday!!! She also had a dry diaper this morning and slept to 7:15 - woo hoo. On a side night, THANK GOD Wes is gone!!! What a jerk **

Okay, our little girl is so on to us!! She is on the verge of being 3 (tomorrow is her birthday) and she is already on to mommy and daddy's little tricks. In my last post, I mentioned how great she has been at not wetting her diaper at night. She made it 5 nights in a row!! We were so happy and proud of her! On day 6, she received her surprise or as she calls it "prize". We gave her a dollhouse (it was really her birthday present) but she thought it was her "prize" for not wetting her diaper at night. Well, she has woke up with a wet diaper the past 2 days!! Is it just a coincidence that after she receives her prize that she starts wetting her diaper?? Does she expect a bribe in order to keep that diaper dry at night? Now she did sleep until 7 am which was very nice but I think I would rather take her being completely potty trained....

Here are some pics from the 4th of July! My mom, dad, sister, and her two daughters came for a visit. I loved Isabelle's dress that I bought on Chez Ami's website. Each week, Chez Ami has a sale of the moment where you can get some really good deals. The deals only last a few days and the items go fast!

Yay - Beasley Household is Dry!!

I am proud to announce that the Beasley household is officially diaper free :-) Isabelle has been wearing panties (not underwear) for the last month without any mess-ups! We do put her to bed with a night-time diaper just in case. We had a "talk" with her and explained that she needed to stay dry through the night and if she has to go potty to knock on the door and go. Since the "talk" 2 nights ago she has woke up with a dry diaper. There is one downfall! Oh no! She is SO aware of when she has to go potty that she is getting up earlier and earlier. Yesterday it was 6:10 and today it was 5:35. She goes straight to the potty but then she thinks she needs to stay up and begin her day. We had another "talk" with her today and said when she wakes up early to go potty that she will go back to bed afterwards. We will see if this talk is as successful..

Our little girl is becoming such a big girl! I mean look at her muscles!
